Yield: 5 portions
1 tbsp onion, minced
oz vegetable oil
12 oz mushrooms, minced
1 lb 4 oz ground chicken
2 oz bread crumbs
1 tsp mixes fresh herbs (parsley, basil, oregano)
Salt and pepper as needed
5 slices favorite cheese
5 sandwich rolls
Saut the onion in the oil. Add mushrooms and saut until moisture has cooked off. Season with salt and pepper and cool.
Combine the chicken with the bread crumbs, mushroom mixture, herbs, and salt and pepper.
Form the mixture into patties.
Saut until brown on both sides and internal temperature reaches 165 degrees.
Top with cheese and melt. Serve on favorite sandwich roll.
