Living Well Recipes: Stuffed Chicken Breast

Chicken Stuffed with Bacon, Spinach, and Goat Cheese
Yield: 4 chicken breasts
Ingredients
4 oz bacon, cooked, chopped and chilled
4 oz fresh spinach, cooked and chilled
3 oz goat cheese
3 oz cream cheese
4 chicken breasts
Salt, pepper, and garlic powder to taste
Olive Oil for sauting
Directions
Combine bacon, spinach, goat cheese, and cream cheese in a bowl. Mix until well combined. Season the stuffing if necessary. Place stuffing mix in a disposable pastry bag and cut the end large enough for the pieces to fit through.
Cut a pocket in the chicken breast for the stuffing. Place pastry bag in pocket and fill chicken with stuffing. Season the outside of the chicken breast with salt, pepper, and garlic powder.
Heat saut pan with olive oil and sear chicken breast in pan. Transfer chicken to the oven and bake at 350 degrees until internal temperature reaches 165 degrees, about 7 - 10 minutes.
Serve chicken whole or cut in half to show off stuffing.
