Living Well Recipes: Braised Cabbage

Braised Red Cabbage with Apples
Yield: 4 servings

1 lb red cabbage, shredded
3 oz bacon diced
2 oz onion, diced
Salt and pepper to taste
2 oz red wine
2 oz water or stock
1 each cinnamon stick
1 granny smith apple, cored and diced
oz brown sugar
cider vinegar

Directions:
Cook bacon in large saut pan. Add onions and cook until tender. Add the cabbage and saut for a minute. Add wine, stock, and cinnamon stick. Cover and cook until the cabbage is almost tender, about 10 minutes.
Add the apples, brown sugar, and vinegar. Cook until apples are tender. Remove cinnamon stick before service.
