Arroz con Pollo
1 frying chicken cut into 8 pieces
1 cups rice
2 cups chicken broth
1 large onion, diced
3 cloves garlic, chopped
1 can tomato sauce
1 tablespoon paprika
1 jalapeno, diced (optional)
salt and pepper
Preheat oven to 350F. Sprinkle salt and pepper over chicken. In a skillet over medium heat brown chicken on both sides, remove from pan and set aside. Add onion and garlic to skillet and saut until onion is translucent, add chicken broth, tomato sauce, paprika and jalapino. Add chicken to pan, cover and place in preheated oven, bake for 30 minutes. Remove chicken from pan, add rice to pan and stir to coat with pan drippings season with salt and pepper, place chicken on rice, cover and cook for 45 more minutes or until rice is tender.
