1 lb. fresh Salmon
1/4 cup chopped fresh parsley
2 tablespoons finely chopped green onions
1/4 cup Panko dry bread crumbs
2 tablespoons lemon juice
1/2 teaspoon fresh dill
1 pinch red pepper flakes
1 tablespoon vegetable oil
2 tablespoons light mayonnaise
1 tablespoon wasabi paste
1 tablespoon lemon juice
1 teaspoon fresh dill
6 whole wheat rolls
Remove skin from salmon and chop coarsely, add beaten eggs, chopped parsley, green onions, and bread crumbs and stir still incorporated.
Add lemon juice, dill, red pepper flakes, and stir to blend
Preheat saut pan or grill. Shape salmon into 2 ounce patties. Saut in oil till golden brown on each side, approx 2 minutes per side.
In a medium sized bowl mix mayo, wasabi, lemon juice, and dill. Set aside
Place salmon burgers on slice roll and top with wasabi mayo. Serve immediately.
